Welbee’s Carrot Banana Cake from The Art We Are

Grease two round cake pans and line them with parchment and set aside. Combine: 3 Carrots Grated, 3 Bananas Chopped, ½ Apple Grated, ¾ cup Sliced Almonds, ½ cup Dried Cranberries. In a mixing bowl beat together: ¾ cup Brown Sugar, 1/3 cup White Sugar, 3 Eggs and 2 tsp Vanilla.  Whip on high until the volume has tripled. Turn mixer on low and slowly drizzle in ¾ cup oil. In a separate bowl combine: 1 ½ cups White Flour, 1 ½ tsp Cinnamon, 2 tsp Baking Powder, 1 tsp Baking Soda, ¼ tsp Salt, 1 ½ tsp Dried Ginger and ½ tsp Nutmeg. Fold carrot mixture and wet mixture into dry mixture and gently stir. Divide batter between the 2 pans. Bake @ 350 for 30 mins until toothpick come out clean. Ice with your fave cream cheese icing recipe!!
