Tomato Salad with Basil, Olive Oil & Honey, by From Scratch – A Mountain Kitchen

Cut 8 very ripe tomatoes into 1/4” slices. Sprinkle with salt & pepper. Mix 3 Tbsp extra virgin olive oil,1-2 Tbsp lemon juice & 2 Tbsp honey together. Add 2 tsp torn, fresh basil leaves. Pour the mixture over the tomatoes & toss gently. Taste and correct seasoning.

Option: serve on a slice of fresh baked toasted bread.
