Preheat BBQ to 400 F. Combine 1 c lukewarm water, 1 tsp sugar, 3 Tbsp olive oil & 2 tsp instant quick-rise yeast in a stand mixer. Add 3 c flour & 1 tsp salt and knead the dough on medium-low for 6 – 8 min. Gather the dough into a ball, lightly oil the top, cover and put in a warm spot to rise about 1 hour. Cut into 3 equal pieces and mold each into a 9 – 10” round. Brush with olive oil.
Set one on the grill, in an area of even heat. Close the lid and grill 2 – 3 min, until the bottom is richly coloured. Set grilled side up on a plate and top with sauce & desired toppings. Turn 1 side of BBQ off, leaving the other at medium-high. Set the topped pizza on the unlit side of the barbecue. Close the lid and cook the pizza 8 – 10 minutes, until the cheese is melted and the dough is puffed and cooked. Meanwhile, top the other 2. Transfer the cooked pizza to a cutting board. Set the next pizza on the barbecue to cook while you cut and eat the first one. Cook the third pizza while enjoying the second pizza.
