The Art We Are Trail Mix Truffles

Chop 3 c dates and put in a pot with 1 ½ c water. Bring to a boil and continue stirring until dates are soft and the water is absorbed. Remove from heat. Add 1 c chopped nuts, ½ c chopped dried cranberries, 1 c chocolate chips and 2 c coconut. Combine thoroughly. Let mixture cool in fridge 20 minutes. Shape into ping pong sized balls and roll in coconut. Gluten-free and vegan.
