Suzanne’s Warm Pecan Cabbage Slaw (serves 6)

4 c shredded cabbage

½ c shredded carrot

¼ c scallions

1 Tbsp melted butter

1 tsp Dijon mustard

¼ c roasted chopped pecans

Combine vegetables in saucepan with salt & pepper and cook covered, with minimal water, 5 – 7 minutes until cabbage is crisp-tender. Combine butter & Dijon and pour over. Sprinkle with pecans.
