Sonja’s Dutch Pea Soup (makes a potful)

Bring to boil 2-3 litres of water with 3 ½ cups gm split peas, 1-2 bay leaf, ½ tsp thyme & 200-300 gm pork chops, spare ribs, ham leg/ hock or meaty ham bone. Simmer 1 hr. Add 2 large sautéed onions, ¼- ½  celeriac diced, 2-3 leeks, 1 largish grated carrot and 1 bunch celery leaves, and cook another 20 min. Take pork out, cut into small pieces, season with salt & pepper, and put back in. Add 1  sliced wurst or sausage, about 2 tsp salt, and lots of pepper. Can put 1 or 2 diced potatoes with other vegetables. Better the second day.
