Pumpkin Millet Muffins (24 muffins) from Pure Vanilla

Combine well: 4 eggs, 2 ⅔ c canola oil, 3 c buttermilk, 2 ½ c brown sugar, 1 tsp vanilla & 2 ½ c pumpkin puree. Separately, combine 6 c white flour, 3 Tbsp baking powder, 1 Tbsp baking soda, 2 tsp salt, 1 Tbsp cinnamon, 1 tsp ginger, 1 tsp nutmeg, 2 ½ c oats and 2 ½ c millet.

Add dry mix to wet and combine until just mixed. Pour into 24 muffin cups in a tray, or oiled tray, and Sprinkle with pumpkin seeds. Bake @ 350 F for about 30 minutes.
