Port Renfrew Hotel’s Veggie Burger

Dice & sauté 1 onion in 1 Tbsp olive oil. Roast ½ c diced almonds. Combine onion & almonds with 1 minced clove garlic, 1 tsp cumin, 1 ½ tsp chili powder, 1 large can black beans, 1 tsp oregano, ¼ c parsley, 1 c sunflower seeds, 3 c bread crumbs, ½ c soy sauce, 5 eggs, 2 c oatmeal and 2 tsp olive oil. Chill 2 hours, then shape into burgers. Stores well.
