Kicking Horse Café’s Mocha Cupcakes

Cupcakes: Boil 4 c Water & add 1 1/3 c Cocoa Powder. Set Aside. In a separate bowl, combine 5 1/3 c flour, 4 tsp Baking Powder, 4 tsp Baking Soda & 3 tsp Salt. Separately, beat together 4 Eggs, 3 c Sugar, 1 1/3 c Vegetable Oil & 2 tsp Vanilla. Add Cocoa mix to Eggs, adding a little dry to the wet, mixing, and repeating. Pour evenly into an individually lined cupcake tray. Bake 15 min at 325° and allow to cool.

Icing: Blend until smooth: 2 c Butter, 2 1/4 c Melted Chocolate, 2 Tbsp Vanilla, 1/2 tsp Sea Salt, 10 c Icing Sugar, 3/4 c Milk and 3 double shots Decaf Coffee. Spread on cooled cupcakes. Enjoy!
