Dried Fruit Mincemeat Tarts from Pure Vanilla Bakery & Cafe

Combine in a large pot over low heat: 2 1/2 cups mixed dried fruit (apricots, dates, raisins, cranberries, currants); 1/2 cup chopped Granny Smith apple; 1/2 tsp ground cinnamon, 1/2 tsp ground allspice, 1/4 tsp freshly ground nutmeg, 1/8 tsp salt, 1/3 cup brown sugar and 2 cups + 2 Tbsp water. Simmer until fruit is tender and slightly thickened. Make s slurry with 1 Tbsp cornstarch and a little water. Add to fruit mixture and cook 2 minutes, stirring frequently. Take off heat and stir in 2 Tbsp brandy. Cool mincemeat and spoon into pre-baked tart shells. Bake at 325 F for 10 minutes to set.
