Lightly grease a 9 x 9” pan. Mix ¾ c cornmeal with 1 c milk and let soak. Mix ½ c whole wheat & ½ c all purpose flour, 4 tsp baking powder & ¼ c sugar. Combine 1 egg and ⅓ c oil and stir into cornmeal. Add to the flour and stir to moisten. Pour into the pan & bake 25 minutes @ 400 F until a toothpick comes out clean from the centre. To vary this, by fry up and chop some sausages and add to the flour; or chop green or red pepper, onion and zucchini and add that to the flour with a tsp of oregano. Great to cut into large squares & freeze for a microwaveable snack.
