Beef Stroganoff From My Chosen Café

Trim 2 lbs beef chuck roast or steak and cut into 1/2” thick strips. Season with 1/2 tsp each salt & pepper. Melt 1/2 cup butter in a large skillet over medium and add 3 cloves chopped garlic, beef strips. Brown lightly and move to side of pan. Add 4 green onions (white part only) and sauté for 2 minutes. Move to beef side of pan. Stir 4 Tbsp flour into pan juices. Add 1 1/4 cup condensed beef broth, stirring constantly, and bring to a boil. Lower heat, add 1 tsp mustard and simmer covered for 1 hour or until meat is tender. Sauté 6 cups fresh sliced mushroom, drain, and add to the skillet along with 1/3 cup sour cream and 1/3 cup white wine. Season to taste and serve over prepared egg noodles, garnished with sliced green onion
